Baelo, is one of the two brands of Productos de Almadraba, dedicated to the commercialisation of yellowfin tuna (Thunnus Albacares), as well as the production of canned, semi-preserved, salted and smoked products from tuna and other species such as canned frigate tuna, mackerel, sardines, salmon, etc.
Yellowfin tuna (Thunnus albacares) is a type of tuna found in the open waters of tropical and subtropical seas throughout the world.
It is an epipelagic fish inhabiting the top 100 metres of the water column. Its size can reach 239 cm in length and 200 kg in weight.
It is an oily fish rich in high quality proteins and a rich source of omega-3 fatty acids, minerals and vitamins.
With regard to its organoleptic characteristics, this fish has a light pink flesh colour. It also has a good level of fat that gives it a juicy texture and an intense flavour.
The tuna fillet is the noble part par excellence. It is located in the upper part of the loin and is usually eaten raw or undercooked. The most common dishes cooked with tuna tenderloin are tuna tartar and tataki. It is also used for the famous tuna encebollado (tuna with onions) and “marmitako”.
