200 gr of sheep cheese
200 gr of goat cheese
200 gr of mixed (goat and sheep) cheese
200 gr of mature goat cheese
Sheep cheese is made in drier areas since sheep need less pasture to survive. Sheep cheeses can be very tender or can undergo a ripening process.
After an aging period, semi-mature or mature ones are produced. They are usually slightly acidic, salty, and buttery, and maybe slightly spicy, but normally sheep’s cheese is more creamy and aromatic than cow’s cheese.
