This payoyo goat cheese is made with pasteurized milk from autochthonous goats of the Sierra. To produce these cheeses, goats graze at Finca La Lapa. There are 400 goats of an autochthonous breed, well known for the flavour of their milk, raised in the Serrania of Cadiz and fed with the pastures of this land.
