The cooking is traditional and light to maintain the appreciated texture, the traditional flavour and the excellent quality of the Spanish fish. PESASUR does not use chemical products during the production of its preserves. 

 The Melva Canutera of Andalusia is a blue fish and, therefore, its consumption supposes a great benefit for the organism. This fish comes from the family of tuna and bonito, and its Omega-3 content makes it a very healthy product. On the other hand, the Melva is a fish with a wide versatility in the kitchen.

The difference between the traditional melva and the canutera Melva lies in the two factors: the weight and color of the fillets. The traditional Melva presents a compact texture and can reach 50 cm in length and 1.5 kilos. While, on the other hand, Melva canutera does not reach 600 grams.
