Gutiérrez Colosía cream sherry wine
Cream sherry is a sweet wine obtained from Oloroso, dark in colour. It has a pungent, full-bodied aroma and is aged for a minimum of four years. It has 18° of alcohol. It uses a mixture of grape types, in a balanced way, such as Palomino and Pedro Ximenez grapes.
Since 1838, the Bodega Gutiérrez Colosía winery has been located at the mouth of the Guadalete River in the Bay of Cadiz. The dry Levante and humid Poniente winds from the Atlantic regulate the ambient humidity, maintaining optimal conditions for wines such as cream sherry or vinegars and brandies.
The stability and quality of the Gutiérrez-Colosía wines are guaranteed by a careful ageing process using the criaderas and soleras system, following the best tradition of the region.
The structure of the cellars is known in the area as the “nave of a cathedral”. They are high buildings with numerous arches that expose the wines to the influence of the special climate that the Jerez region enjoys.
In 1969, the Gutiérrez-Colosía family bought the ruins of the Palacio del Conde de Cumbrehermosa -cargador de Indias-, which already had a bodega, and in its place they had two more naves built. The Bodegas Gutiérrez-Colosía are the only ones that currently face directly onto the Guadalete River. This provides the perfect humidity for the biological ageing of the fine wines under the “en flor” veil. This refers to micro-organisms that reproduce on the surface of the wine.
