Rosemary honey has a thick texture and has a color similar to amber. Once it crystalizes, its texture gets harder and its color, more white. Precisely, to modify its texture and to make it more liquid we can follow the same steps that we would follow with any other kind of honey: bain-marie it without letting it get to 40 ºC.
