Orange Wine – Castillo de Matrera
Orange wine obtained from the maceration of wine with natural oranges. It is a flavoured wine with some similarities to vermouth.
The base of this wine is the natural sweet wine or naturally sweet, which is usually of the Pedro Ximénez variety.
It has a sweet taste but with slight citric sensations. It is recommended to be served chilled and can be served as an aperitif with cheese, pâtés and smoked meats. It is also ideal with chocolate desserts, truffles, nut ice cream. It can be drunk as an after-dinner liqueur.
To make a great orange wine, we need a quality base wine, which can be a sweet wine or a dry wine, to which concentrated must is added to sweeten the wine.
Once the wine is stabilised, the wine is then topped up, that is, wine alcohol macerated with bitter orange peel is added, which gives it the special character that only these wines have, and which provides the flavour and aromas of this unique wine.
But to be an Orange wine, it has to rest in 650 litre oak casks by the criaderas and soleras system for a minimum of 2 years, as if it were a fortified wine.
