Palo Cortado is a variety of sherry that is aged to become a fino or amontillado wine.In this process, and without a known reason, it begins aging as an oloroso. This results in a wine with some characteristics of an oloroso wine and some characteristics of an Amontillado wine.

 From 1838, the winery Bodega Gutiérrez Colosía is situated in the bay of Cádiz, in southern Spain. In 1969, the Gutiérrez-Colosía family bought the ruins of the Palace of the Count of Cumbrehermosa, which already had a winery, and they built two more warehouses.
