Legend says that over 4,700 years ago, the Chinese Emperor Shen Nung was standing in his garden with a drinking bowl of hot water as the wind swirled
up the leaves of a wild, growing tea bush. Three of these leaves fell into his drinking bowl and the Emperor sensed a pleasing fragrance. Sipping the water, he soon felt refreshed and focused.
Green tea had been discovered.
Various roasting and steaming methods were developed to keep the leaves long-lasting. Many high-quality Japanese green teas are shade-grown
teas, whose leaves grow more slowly, so acquiring nutrient- and flavour compounds.
