Hermanos Cárdeno is a family business in the mountains of Huelva that has been producing Iberian cured meats since the beginning of the 20th century.
This acorn-fed Iberian pork shoulder comes from animals raised in the wild in the pastures, where their diet is based mainly on acorns. The feeding of this Iberian breed with acorns is what gives it its characteristic flavour due to the fact that 80 % of the fat in the acorn is oleic acid, the main component of olive oil.
In addition, another characteristic of this production process is the fact that these animals are free-ranging. This allows them to exercise their musculature, favouring an intramuscular infiltration of fats, thanks to which a unique and different flavour is obtained.
Finally, the product is cured by hand for approximately 24 months using sea salt.

Firstly, Iberian ham is a source of vitamins (B1, B6, B12), proteins and folic acid, which is necessary for our brain. It is also rich in antioxidants and minerals.
Secondly, it is compatible with low-calorie diets due to the small amount of caloric value it contains. As mentioned above, it has a high oleic acid content.
