Mature goat cheese with red tuna roe – tuna of almadraba – 200g

Mature goat cheese with red tuna roe from the almadraba of Barbate. Gadira brand. Made with dry-salted and dehydrated red tuna roe.

The cheese is made by Quesería El Gazul in Alcalá de los Gazules in Cádiz. After the normal process of elaboration, the cheese is wrapped in olive oil and dehydrated in red tuna roe powder. Then it is vacuum packed and kept between 15 days and a month. The result is a unique union of aroma and flavour.
