Sweet red wine Hacienda Parrilla Alta
La Parrilla Alta is an old olive grove located in the municipality of San José del Valle in the province of Cádiz.
The format of the bottle in which the wine is bottled is 75 centilitres. We can also confirm that it is a rather exclusive variety of sweet red wine, since the production is 8,000 bottles. It could be described as a sweet red wine with ageing, whose variety is Tintilla de Rota and Syrah.
As for the elaboration of this sweet red wine, the grapes are selected by hand, and its maceration lasts 4 days. Once this is done, it is pressed and the fermentation process is stopped so that the sugars are maintained. Once this last step has been completed, the wine is refined in stainless steel tanks and then transferred to barrels to be aged for 3 months in French oak. A luxury of details for a good gourmet product.
If we talk about its tasting, at first sight we can appreciate its intense red cherry colour. Its density is ample, and it shows a sensation of brilliance and cleanliness. Its smell is reminiscent of blackberry jam, with hints of cinnamon and cocoa. In terms of flavour, it is fresh to start with, as well as sweet, and with very good tannins. In terms of acidity, it has a long aftertaste with a red fruit finish. Similar to candied fruit. The finish is bitter and sweet. Both flavours, difficult to balance, are in perfect balance in this sweet red wine.
