Spelt wheat is quite different from traditional, everyday pasta. This kind has not sustained any genetic modifications as common wheat has, making the nutritional values in spelt bigger than in wheat. It is suprior in fiber, protein, minerals and vitamins. It is also better for the digestive process, especially for those with some kind of intolerancy towards wheat.
Still, this spelt is high on gluten, so it is not suitable for celiacs.
